旁白:梨山茶是高級工藝,要做好,真的很難。
旁白:做茶有多難,梨山土生土長的茶農,陳孟智最知道。
陳:在工作的環境下是原始森林,然後跟茶樹一起生長,看看昆蟲,看看土壤,想一下說下
一季的茶葉我們要做什麼樣的風味給大家去品嚐。
旁白:說得一派輕鬆,但6年前陳孟智剛回到自家茶園耕作,一季春茶就幾乎把他擊垮。
陳:一開始剛銜接的時候,我就是以電腦工程師的方式去做管理也好,製作也好,在製作過程才發現說,這不是單單像電腦工程這麼簡單。
旁白:電腦工程師出身的他,千算萬算,算不到老天爺根本不想讓他算,高海拔的茶區優勢
變成劣勢。
陳:在海拔兩千公尺以上高山,它的早晚溫差極大,在製作過程當中你發現你會被天氣所影
響。
旁白:梨山的好,不只山好,茶好,製茶的工藝更好。
陳:茶湯顏色,綠中帶黃,就是代表著梨山茶高海拔的香氣與喉韻,你如果太青,他只有香
氣沒有喉韻,那也很常有一些人會有腸胃不適的問題。
旁白:結合好茶與好工藝,他的梨山茶才真正開花結果。在台灣獲獎無數,更連續三年拿到
比利時iTQi三星認證的水晶獎盃。
陳:我是梨山小孩,我想把梨山茶做好,讓世界因為好茶認識梨山,更認識台灣,這樣我就
心滿意足了。

Baking Li-Shan tea is considered an advanced craft, which takes efforts to manage.
No one would know better than the local tea farmer from Li-Shan, Mong-Zhi Chen, how difficult baking proper tea is..
Chen: Farmers grow and live with tea trees in the original forest, observing the bugs and the soil, trying to figure out what kind of tea they are going to present to the customers in the next season.
Despite how easy Chen mentions about growing tea, he was almost broken down by a single spring tea growing season six years ago when he went back to his family tea farm as a novice tea farmer.
Chen: I tried to run the tea farm career like a computer engineer when I first joined the tea farm. However, it turned out that it was much more than just a computer project.
Chen, as a former computer engineer, had never expected that he failed to calculate or predict at all. The advantages of the high altitude tea area became disadvantages to him.
Chen: Temperature can drop dramatically from morning to night in the mountains over 2,000 meters. During the tea baking process, you will be aware of being influenced by weather.
Li-Shan not only possesses its good mountain or good tea, its tea farmers’ tea baking craft even shines brighter.
Chen: Li-Shan tea’s color of green and yellow represents its aroma and aftertaste due to high altitude. With too much green in tea, the tea leaves only aroma but aftertaste, which leads to someone who drinks the tea suffering stomach upset.
With the best tea leaves and the best craft, Chen’s efforts put on Li-Shan tea eventually paid back. Chen’s Li-Shan tea has brought him innumerable awards in Taiwan, and he even won the crystal trophy of Belgium iTQi with three start guarantee in three straight years.
Chen: I was born in Li-Shan, I just want to Li-Shan tea properly, so that the world
outside would know Li-Shan and Taiwan better. This is all I am concerned about.
